Dance of Natraj-meaning
Why do we feel sad and down some times... mostly because of laziness and self pityness..how to overcome this situ, not by drinking alcohol or smoking or any other addiction but by simply getting busy and stop self pityng. for quick results start dancing like Natraj your blues will fly away

LAKSA PASTE
Red Onion
sea salt
2 tablespoons Ginger chopped
4 Cloves
1 teaspoon Turmeric chopped
1 Stalk of Lemongrass bottom 1/3 only - chopped
10 Dried Chilli's or 3 Birdsey chillies
6 candle nuts or macadamia
½ teaspoon shrimp paste
1 bunch Coriander root and stems
10 Vietnamese Mint leaves
1 teaspoon coriander seed
1 teaspoon fennel seed
4 cardamom pods
1 teaspoon cumin seed
4 Cloves Garlic
½ teaspoon Cinnamon
Drizzle of vegetable oil (on top of paste to seal in flavour)
MethodBlend all ingredients in a blender and cover with some oil and refrigerate for up to a month or pound each ingredient in a mortar and pestle starting with the onion and the salt (the salt helps to break down the onion with its texture) then adding each one once you have pounded the previous ingredient.

Malaysian..Chicken Rendang
Ingredients

3 tablespoons oil shopping list
6 shallots chopped shopping list
2 hot red chili peppers cut lengthwise shopping list
3 teaspoons ginger root grated shopping list
6 cloves garlic crushed shopping list
2 pounds boneless skinless chicken breasts cut into medium pieces shopping list
3 stalks fresh lemon grass ends crushed shopping list
2 cups water shopping list
1-1/2 cups coconut milk shopping list
How to make it

Heat oil in large frying pan.
Add shallots, peppers, ginger and cloves.
When golden brown add chicken breasts, lemon grass, water and coconut milk then bring to a boil.
When chicken is almost cooked add sugar and coconut milk and return to a boil.
Lower heat and allow chicken to simmer uncovered until very tender.
Add salt to taste then serve with hot rice.
